Chicken Taco Filling

Ingredients:

3 Tablespoons unsalted butter (If you are watching your fat, can reduce to 1 T.)

4 cloves garlic, minced

2 Teaspoons minced chipotle chiles in adobo sauce (This is what give a unique flavor)

1/2 C. Orange Juice (Use real orange juce)

1 Tablespoon Worcestershire sauce

3/4 C. Chopped fresh cilantro leaves

1 1/2 pounds Chicken breast

2 Teaspons yellow mustard

Salt and pepper

12 Corn Tortillas

Instructions:

Melt butter in large skillet over medium-high heat.  add garlic and chipotle and cook until fragrant, about 30 seconds.  Stir in orange juice, Worcestershire, and 1/2 cup cilantro and bring to a boil.  add chicken and simmer covered, over medium to low heat until meat is cooked, 10-15 min. flipping chicken half way through cooking.  Remove from skillet and place on plate and cover to keep warm.

Increase heat to medium high and cook until liquid is reduced to 1/2 cup, about 3 min.  Remove from heat and wisk in the mustard.  Shred meat with fork and return to skillet.  Add remaining cilantro and toss so that all is covered.  Season with salt and pepper and serve on tortillas.  You can also place on a salad or just eat.

You can add:  Greek yogurt, fresh salsa and more fresh cilantro.  Taste amazing

Modified:

For those that are looking for a lean meal I have modified this.  It still is good but removing a few things does make it taste a little different. Also I will have you place in a crock pot and slow cook.  It will keep the meet tender and flavorful.

3 Tablespoons Orange Juice (Squeeze from fresh oranges)

1 1/2 Teaspoon Worcestershire sauce

1C. Chopped fresh cilantro leaves

1 1/2 pounds Chicken breast

4 Teaspons yellow mustard

Salt and pepper

12 Corn Tortillas

Instructions:

Place all ingredients in a crock pot and slow cook until done.  Make sure you are to stir occasionally and when meet becomes tender, shred for the tacos.  You can also place on a salad, taste great!!
