“Cheesy” Lemon Protein Oat Bars

This is a great bar also adapted from Jamie Eason.

“Cheesy” Lemon Protein Oat Bars

Non-fat no-stick spray

1 ½ cups Gluten free quick cooking oats and 1 heaping T. gluten free Oat flour

3 scoops vanilla whey protein powder (I use Only Protein, it has to be high protein, low carb and low sugars)

8 packets True Lemon drink mix

1 tsp baking soda

¼ tsp salt

4 egg whites

¼ cup Xylitol or Stevia in the raw

1 – 4 oz. jars or packs of baby food applesauce

¼ cup Lactaid fat free cottage cheese

1 -4 oz baby food jar of water

Preheat oven to 350 degrees.  Spray an  8 x 8 pyrex dish with non-stick butter spray.

In a large bowl, mix egg whites and sweetner until frothy.  Add  baking soda, salt, baby food, cottage cheese, lemon drink mix  and water until well combined.  Add the oats and protein powder and mix gently.

Pour batter into the pyrex dish and spread evenly.  Bake 20 – 22 minutes or until a toothpick comes out clean.  Let cool and cut into 16 pieces – 4 x 4.

2 squares for woman and 4 for men are a serving.
